David Savoy from Church Point, Chairman of the Louisiana Crawfish Research and Promotion Board, says crawfish season has picked up lately but it’s usually up and down this time of year.

“The biggest thing that has likely changed is demand and everyone knew it would,” said Savoy. “The demand had been very weak in most places. People weren’t quite ready yet. So the demand has picked up.”

And the crawfish were there and ready.

“There were places where they were quite small,” Savoy continued. “I think the early cold weather set them up so the weather got cold, the bottom got cold. And although we didn’t’ get extremely cold weather it stayed cool enough and cloudy enough to where it never warmed up. And we’re starting to get a little bit of change and more daylight hours which does help.”
